Panna Cotta

Panna cotta has been a long time favorite of Rooted Pear. Its texture is silky and smooth while the taste is creamy and simple, making it a perfect partner to pair up with more exotic ingredients. This rich dessert is known for its glossy white appearance and is traditionally unmolded onto a plate alongside some complimenting flavors. As we took to the task of whipping up Rooted Pear’s take on this classic, we realized that sometimes a seemingly basic dish can be more difficult to execute than you had imagined. Although we were thoroughly satisfied with the panna cotta itself, we were struggling to find a flavor that would pair nicely with the delicate sweet cream. We tried pairing several different accoutrements such as mint, lemon, fig- none of which we found harmonious. In the end, we felt that all these bright notes ended up overwhelming the graceful simplicity of the panna cotta itself. The search for the right flavor continues in the RP kitchen but until that’s found, we’ll keep working on better ways to unmold our decadent dessert.
