Charred Grapefruit Salad

Spring is right around the corner, and we are eagerly awaiting the arrival of all our favorite seasonal fruits and vegetables. It's about to be that time of year where farmers’ markets start to draw the morning crowd and the rows of wooden crates begin to fill up with produce in vibrant colors, shapes, and smells. There is nothing we enjoy more than perusing through the local farmers’ latest bounty - knocking, smelling, and inspecting every delicious newcomer to the season. With that said, this week’s kitchen creation is one of my favorites. It’s simple yet versatile; not to mention, refreshingly tasty! We’ve taken some powerful flavors and weaved them together to create a beautiful salad that’s perfect for a Spring kick-off!

               Watercress is known for its earthy flavor with hints of bitterness in each bite. This flavor profile is significantly toned down when it comes to Baby Watercress. You still get a light earthy aroma but the bitter trait is mild and welcoming which is why we tossed in the blue cheese and grapefruit. All three ingredients share a similar sharpness while adding some new dimension as well. We've charred our ruby red grapefruit to further accentuate the citrus and tartness needed for a typical salad dressing while the shaved bleu cheese adds a salty richness to the blend. To top it all off with a bit of sweetness and crunch- enter snap peas! We’re a fan of adding julienned snap peas to any salad but its especially harmonious in this combination.
